Only the first pressing of the grapes is used for the wine, after alcoholic fermentation, the cold cellar temperatures force the wines into dormancy over the winter months, all grapes undergo fermentation in temperature-controlled, stainless steel cuves, white wine does not undergo malolactic fermentation, punch-downs and pump-overs occur daily for red wines, red wine undergoes a natural malolactic fermentation.

關於Spécial Club:

雖然大型的香檳酒商一直以來主宰著全球香檳的市場,但是香檳區大多的葡萄園還是由為數眾多的葡萄農所擁有。缺凡酒商由雄厚資金所架構出的行銷網路,葡萄農 大多只能接受將收穫的葡萄賣給酒商。不過還是有小一批有志之士,決定自行耕作、釀造與行銷,勇敢地對抗龐大的商業機器。 他們決定以它們所擁的的土地資源以及累積數個世代的釀酒傳統,加上彼此嚴格的品質控管,一起推出了” Special Club”,每款Special Club嚴格規範必須來自有的葡萄園(依據法規RM酒莊可以外購最多5%的葡萄),也幾乎都是來自這些酒莊最好的葡萄園。每個成員酒莊,每年可以自行決定 是否生產Special Club,一但決定生產,在發酵完成靜態酒後(此時稱為vin clair),必須送交樣品,由所有組織成員與邀請專家組成的評審團進行第一次品試,通過後才可以進行接下來的瓶中二次發酵,經過三年的瓶中發酵與培醞 後,此時再度由評審團進行第二次品試,合格之後,才可以成為最終裝入特別共同訂製的酒瓶與規格一致的酒標,成為組織所認可的最高等級Special Club香檳。 Paul Bara莊主Chantale Bara女士為現任輪值主席
